Anji Bai Cha - 安吉白茶, is an exclusive green tea from Anji, Zhejiang Province, known for its dense bamboo forests and tea plantations. This rare tea, with its long, delicate and vibrant green leaves, is a dream for green tea connoisseurs. Anji Bai Cha is actually a green tea, processed according to green tea methodology, and the name "white" refers to the lighter Camellia Sinensis plant.

Anji Bai Cha is produced in Anji, part of Huzhou Prefecture, which is known for its pollution-free green production. Anji has been designated as a pilot municipality for ecological building construction by the Chinese government. To brew Anji Bai Cha properly, the tea is brewed at low temperatures of around 80°C for optimal infusion. The brewing time should be around three minutes but can be adjusted to taste.

Anji Bai Cha is said to have many health benefits, but this tea should be drunk for its great taste rather than its health benefits alone. Historically, "white tea" or "bai cha" was mentioned as early as the Tang Dynasty by Lu Yu, known as China's tea saint, in his book "The Classics of Tea". In the 12th century, "white tea" was mentioned again in Emperor Huizong's "Da Guan Cha Lun" (Perspective on Tea), where he described it as a tea plant with jade-white leaves.

For this tea, we suggest that you try the traditional Chinese Gong FU style to brew your tea. The idea behind this technology is to use greater proportions of tea leaves for water and very short break times. By using more tea leaves and having very short brewing, you only manage to extract parts of the entire taste spectrum. The tea can then be enjoyed in so -called "sections", which gives a much more nuanced experience. As the taste develops gradually and it is much more leaves, this contributes to a much more intense taste than when brewing in Western style.
