There are teas that deserve to be drunk in silence. Teas that carry legends, smell of history and taste as if the mountains themselves have whispered their secrets through the leaves. Duck Shit Oolong – or Ya Shi Xiang (鸭屎香) as it is called in Chinese – is just such a tea. The name may arouse curiosity, but it hides a story as unusual as the tea itself.
According to tradition, a tea grower in the misty mountains of Guangdong Province once found an oolong so delicious that he wanted to keep its secret to himself. To mislead others, he named it "Duck Scat Tea"—a name so unappealing that no one dared ask for a taste. But what is truly good has a tendency to reveal itself. Word spread, and Ya Shi Xiang has since become one of the most appreciated and legendary Dan Cong oolongs from Feng Huang Shan.
Dan Cong (单枞) literally means “single bush” and refers to a very special group of oolong teas from Fenghuangshan – the Phoenix Mountains – in Guangdong. These teas are grown at altitudes between 350 and 1560 meters above sea level, mainly around Wudong Shan (1391 m). Each Dan Cong tea carries a unique flavor profile, often naturally associated with fruits, flowers or other aromatic nuances – which makes them known for their ability to “imitate” different flavors, without anything other than the tea leaf itself. Duck Shit Oolong is one of the most celebrated examples of this phenomenon.
The tea leaves are a deep dark green, almost brownish black, slightly twisted and have a natural elegance. When brewed, they slowly unfold and release a clear, golden liqueur – a liquid that shimmers in the cup like liquid amber.
The aroma is intensely floral, with hints of honeysuckle and orchid. The taste is deeply nuanced and develops in several layers – from sun-ripened apricots and honeyed sweetness to subtle mineral notes and a hint of bitter almond. A light florality of fresh cut flowers rounds off the experience. The mouthfeel is smooth, almost buttery, with a fullness that fills the entire palate and leaves a long, sweet aftertaste.
This is a tea that shows what a true Dan Cong can be – complex, vibrant and at the same time harmonious. A taste journey that brings to mind mist-shrouded heights, ancient bushes and craftsmanship in its purest form.
For this tea, we suggest that you try the traditional Chinese Gong FU style to brew your tea. The idea behind this technology is to use greater proportions of tea leaves for water and very short break times. By using more tea leaves and having very short brewing, you only manage to extract parts of the entire taste spectrum. The tea can then be enjoyed in so -called "sections", which gives a much more nuanced experience. As the taste develops gradually and it is much more leaves, this contributes to a much more intense taste than when brewing in Western style.
